I was given high resolution images of an area and have been asked if I can map a shoreline with them. Is this possible with the CoastSat toolkit?

you probably won't have the Short Wave Infrared band, which is used by CoastSat to map the shoreline. But checkout what we did with Maxar, https://github.com/kvos/CoastSat.Maxar, that was applying a method similar to CoastSat to very high res RGB-NIR imagery
